Carolina Style Barbecue Sauce
Apple Barbecue Sauce
- 1 cup ketchup
- 1/3 cup apple, peeled and grated
- 1/4 cup apple juice
- 1/4 cup soy sauce
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 1/4 cup onion, grated
- 2 teaspoons bell pepper, grated
- 3/4 teaspoon garlic powder
- 3/4 teaspoon white pepper
Preparation:
Combine all ingredients in a medium saucepan. Bring to a boil. Reduce heat and let simmer 15 minutes.
Spicy Apricot Barbecue Sauce
- 2 pounds apricots, pitted and halved
- 3 large tomatoes, halved
- 3 cups brown sugar
- 2 cups cider vinegar
- 1/2 cup dry white wine
- 1 onion, chopped finely
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 teaspoons hot sauce
- 2 teaspoons Dijon mustard
Preparation:
Place all ingredients in a large stockpot and bring to a boil. Reduce heat and simmer for 1 1/2 to 2 hours. When sauce has reduced, strain through a sieve. Use immediately or store in an airtight container for up to 4 weeks.
Sweet Mustard Sauce
- 1 cup yellow mustard
- 1 cup cider vinegar
- 1/2 cup apricot preserves
- 1/4 cup sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon black pepper
- 1/2 teaspoon hot sauce
- 1/2 teaspoon salt
Preparation:
Mix all ingredients together in a large saucepan. Allow mixture to simmer for 25-30 minutes. Allow to cool slightly before serving with meat.
Savory Sweet Mustard Sauce
- 1 cup prepared mustard
- 1/2 cup molasses
- 1/4 cup cider vinegar
- 1/4 cup honey
- 1 tablespoon corn oil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/4 teaspoon ground black pepper
- dash of cayenne pepper
Preparation:
Combine the dry ingredients in a saucepan. Slowly add vinegar, stirring until its well mixed. Add remaining ingredients and bring to a boil. Reduce heat and simmer, stirring frequently for about 10 minutes.
Honey Mustard Barbecue Sauce
- 1/3 cup Dijon mustard
- 1/3 cup dark honey
- 1/4 cup vegetable oil
- 2 tablespoons whole-grain or stone-ground mustard
- 2 tablespoon minced green onion (optional)
- fresh cracked black pepper
Combine mustards in a bowl and mix well. Add other ingredients and continue mixing until smooth. Store in an airtight container in the refrigerator.
Old Fashioned Mustard Sauce
- 2 slices bacon
- 1 onion, finely chopped
- 3/4 cup prepared yellow mustard
- 1/4 cup honey
- 3 tablespoons ketchup
- 2 tablespoons cider vinegar
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
Cook bacon in a medium skillet until nearly crisp. Remove bacon and chop finely. Add onions and cook until soft and opaque. Add chopped bacon and remaining ingredients. Simmer over a low heat, stirring occasionally until well combined.
